Lenten Menu

Okay, so one thing I know about myself is that I am a huge procrastinator. I realize what a foolish goal I set out for myself blogging every night about my dinners. Yeah, way too far fetched for this girl.

Thus I am going to change my Lenten recipe sharing posts. Instead, I will just post my weekly menu, and anybody that is absolutely dying to try one of the recipes, let me know. So, here it goes.

Monday: New York Goodwiches; Peach-cobbler muffins
Tuesday: Indonesian fried rice; Sweet potato soup
Wednesday: Artichoke pasta, naan, chocolate no-bake cookies
Thursday: Borscht, Flaky biscuits, veggie kabobs
Friday: Potluck at Church
Saturday: Leftovers
Sunday: Veggie burgers, salad, roasted red potatoes

Sounds great right! I guess we will see... half of my menu ideas I have never made before!

Wow that is quite the plan, especially with kids. How do you deal with your picky eaters with this? I usually have a cooked chicken breast and some meatballs in the fridge to add to my kids' meals, hoping they will eat some of the veggies and pasta/rice/bean items that I made for the main meal. Tonight I'm making veggie pot pie, that usually goes over well. But I do put chicken in their servings. I'm also going to try a vegetarian jambalaya. I think I'll try a scallops recipe too. I rarely cook with scallops, do you have any experience with them?

Wow, I never thought about just adding some meat to their dinner... I just have been tweeking what I make into something that they would like. For example, last night. We had goodwiches, which is just lots of veggies in a tortilla. L & C had bean burritos instead! They love rice and C loves beans, so usually they will eat that. Oh yeah, and bread and corn on the cob; our staples! I have never tried scallops. That seventh day adventest thing still sticks with Josh!
